Most complex organic synthetic and biological systems can be characterized as 'soft matter'. The most universal aspect of soft matter is that the energy density is by many orders of magnitude lower compared to conventional solid state systems. As a consequence fluctuations play a very important role and many different length and time scales are relevant.
