Aflatoxin contamination has become a major health issue since many people lose their lives or become ill after eating food contaminated with it. Maize, the staple food in most of sub-Saharan Africa is particularly vulnerable to the contamination. The contamination in maize is mostly the result of storing maize that is not completely dry in poorly designed granaries. Due to temperature differences and moisture migration, moisture may accumulate in some locations of the storage structure and result in rotting as well as mycotoxin contamination.
