The content and bioactivity of health-promoting flavonoids naturally found in various fruits are known to significantly decrease during thermal processing and storage. Novel technologies, such as high pressure processing (HPP) and pulsed electric fields (PEF) are often suggested as alternatives to thermal processing to minimize negative processing impact on natural health promoting bioactive compounds and possibly enhance their extractability from the food matrix.
